Running a convenience store can feel like going in circles, but understanding shopper behaviour as they walk round your store can help.

Rising costs, staff shortages, shrinkage – it must feel like running a convenience store is like going round in circles, chasing your own tail to keep things going. However, what if we were to tell you that’s exactly what your shoppers are doing when they visit your store.

Our research has shown us that typically when people enter a Convenience store, they immediately head round the sides of the outlet to pick up the things they need quickly. Then they dip into aisles from the back of the store to pick up the other items that they need.

So what does this mean for making the most of Biscuits’ sales? Well, if the majority of shoppers are typically not walking up and aisles and visiting all areas of the store, location is critical.

To maximise sales, we recommend: 
  1. To make shopping as easy as possible, place items or categories that typically have a high rate of sale either at the sides of the store or in aisle near the back of the store.
  2. Make the Biscuits category unmissable outside of the fixture through Point of Sale or signage e.g. "Find me in the Biscuits aisle!"
  3. Locate Biscuits near other categories that people tend to either shop or consume together - i.e. Sweet Biscuits with Tea / Coffee, Savoury Biscuits with Cheese / Chutneys – to make shopping as easy as possible.

At the end of the day, meeting the needs of your shoppers and making your store as easy to shop as possible is critical to ensuring they return. Understanding how shoppers move about Convenience stores can help you maximise sales and stop your head spinning around!
